| Parsley | 1 Tablespoon, chopped | |
| Mayonnaise | 1 1/2 Tablespoon | |
| Prepared mustard | 2 Teaspoon | |
| Worcestershire sauce | 1/2 Teaspoon | |
| Back fin or lump crabmeat - 12 ounces | ||
| Cracker crumbs - 1/3 cup | ||
| Unsalted butter | 2 Tablespoon | |
Directions
GETTING READY
1) Lightly beat the egg.
2) Chop parsley.
3) Pick over crabmeat and discard cartilage and shell.
MAKING
4) Combine chopped parsley, mayonnaise, mustard, egg and Worcestershire sauce.
5) Blend well.
6) Mix crabmeat with cracker crumbs and egg mixture.
7) Shape crabmeat into 4 patties and saute in butter until golden, about 4 minutes on each side.
SERVING
8) Serve the crab cakes as side dish.
