Mary Land Fried Chicken Recipe
Ingredients
| Egg | 1 , beaten | |
| Milk | 3 Tablespoon | |
| Saltine crackers | 1 Cup (16 tbs), finley crushed | |
| Dried thyme | 1 Teaspoon, crushed | |
| Paprika | 1/2 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Chicken breasts | 3 Pound | |
| Cooking oil | 2 Tablespoon | |
| Milk | 1 Cup (16 tbs) | |
| 1 recipe Cream Gravy | ||
Directions
1 In a small mixing bowl combine the egg and the 3 tablespoons milk. In a shallow bowl combine the crushed crackers, dried thyme, paprika, and pepper. Set aside.
2 Rinse chicken; pat dry with paper towels. Dip chicken pieces, 1 at a time, in egg mixture, then roll in cracker mixture.
3 In a large skillet heat oil over medium heat. Add chicken and cook, uncovered, for 10 to 15 minutes, turning occasionally to brown evenly. Drain well.
4 Add the 1 cup milk to skillet. Reduce heat to medium-low; cover tightly. Cook for 35 minutes. Uncover; cook for 10 minutes more or until chicken is tender and no longer pink. Transfer chicken to a serving platter; cover and keep warm. Prepare Cream Gravy. If desired, serve with mashed potatoes. If desired, garnish with fresh thyme.
