Marvelous Minestrone Recipe
Marvelous minestrone is a mixed vegetable and mushroom soup made with added barley and macaroni. Cooked together, the marvelous minestrone is is herbed with a medley of fresh herbs and spiced to make a hearty and filling meal.
Ingredients
| Onion | 2 Cup (16 tbs), finely chopped | |
| Garlic | 1 Clove (5gm), minced | |
| Cabbage | 3 Cup (16 tbs), finely shredded | |
| Carrots | 2 Cup (16 tbs), finley diced | |
| 1 cup green beans, cut | ||
| Potatoes | 2 , cubed | |
| Zucchini | 2 Cup (16 tbs), chopped | |
| Mushrooms | 4 Ounce, sliced | |
| Stewed tomatoes | 2 Cup (16 tbs) | |
| Parsley | 3 Teaspoon, minced | |
| Basil | 1 Teaspoon | |
| Rosemary | 1/2 Teaspoon | |
| Tomato puree | 2 Cup (16 tbs) | |
| 4 cup beef bouillon | ||
| 1 cup kidney beans cooked | ||
| 3/4 cup whole wheat macaroni | ||
| 1/3 cup barley, raw | ||
Directions
1. Saute onion until transparent.
2. Combine garlic, cabbage, carrots, green beans, potatoes, zucchini, mushrooms, and tomatoes in a large soup pot. Add sauted onions and cook for 10 minutes.
3. Add parsley, basil, rosemary, tomato puree, and bouillon.
4. Puree 1/2 cup kidney beans in blender and add to soup. Add remaining 1/2 cup whole kidney beans. Bring to a boil. Reduce heat and simmer for 25 minutes.
5. Add macaroni and barley. Cook for 15 minutes longer.
