Ingredients

 
1 cup graham crakers
 
1/2 cup toasted coconut
 
1/2 cup margarine
 
1/2 cup powdered sugar
 
1/2 tsp vanilla extract
 
1/2 cup soy milk
 
2 cups vegan marshmallows
 
1 pack vegan white chocolate chips
 
12 maraschino cherries

Directions

1) Preheat the oven to 375 degree F.
2) Put the graham crakers in the cuisinart. Then put the toasted coconut in the cuisinart.
3) In a bowl, add the graham crakers, toasted coconut and 1/4 cup margarine. Mix well.
4) Press to the bottom and sides of a pie plate, then bake for 10 minutes and set aside.
5) In a bowl mix 1/4 cup margarine, powdered sugar, vanilla extract and set aside.
6) In a pan heat soy milk and the vegan marshmallows on medium heat until the marshmallows melt.
7) Add the marshmallow mix into the margarine mixture. Blend well and pour into the prepared pie crust.
8) Top the pie with vegan white chocolate chips, a few vegan marshmallows and maraschino cherries. Slice and serve.
