Ingredients

 1 1/2 dl. Marsala or dry Madeira
 Water3 Tablespoon
 3 tablespoons castor sugar
 Egg yolks3
 Double cream4 Tablespoon (For cold sauce only)

Directions

A rich and sweet sauce.
Put all the ingredients in the top half of a double boiler and whisk over boiling water until the sauce becomes a thick foam.
Immediately remove from the heat as overcooking will cause the sauce to curdle.
Transfer to a jug and either serve at once or stand in a pan of warm, not boiling, water until required.
