Marsala Figs Recipe

 4 ripe figs, wiped
 1/4 pint/150 ml sweet Marsala wine
 Mascarpone cheese4 Tablespoon
 Ground almonds2 Tablespoon
 4 whole almonds
 Mint sprigs to decorate

Directions

Starting at the top of each fig and without cutting all the way through, slice each into quarters to open out the fruit.
Place the figs in a shallow dish and pour the Marsala wine over.
Cover and leave for about 1 hr.
Meanwhile, mix together the mascar-pone cheese and ground almonds, and leave to chill in the fridge until required.
Remove the figs from the Marsala wine and stand each fig in a serving dish.
Spoon some of the Marsala wine over fruit, then place some of the prepared cheese mixture in the centre.
Top with an almond and decorate with mint sprigs.
Serve immediately.
