Marrow Dumplings Recipe

Ingredients

 
Two 3-inch marrow bones
 
1-1/2 tablespoons softened butter
 
1 egg, beaten
 
1 tablespoon minced fresh parsley
 
6 tablespoons fine bread crumbs
 
1/4 teaspoon each salt and baking powder
 
1/8 teaspoon each black pepper and freshly grated nutmeg

Directions

Remove marrow from bones to make 3 tablespoons.
Mash with fork and mix in butter.
Combine with remaining ingredients and form into small balls the size of a nutmeg.
Drop into gently boiling water and cook about 5 minutes until balls are slightly puffed and rise to surface.
Be careful not to overcook.
