| Malted brown granary breadcrumbs - 4 ounces | ||
| Milk | 1 Tablespoon | |
Directions
MAKING
1) In a jug, put the apricots along with just enough water to cover.
2) On full power, heat for 2 minutes. Let stand for 10 minutes. Then, drain and chop finely.
3) Then, lightly spread oil in a 2-pint bowl. In the base of the bowl, place a small circle of non-stick vegetable parchment.
4) To this, add the vegetable fat and on full power, heat for 1 to 1 1/2 minutes or until melted.
5) Then add the sugar and beat until it is blended well.
6) Then, mix in the marmalade.
7) Gradually add the cherries, grated lemon rind, apricots and sultanas.
8) In a small bowl, combine the ground rice, flour and baking powder.
9) To the mixture in the large bowl, add this.
10) Now, beat in the eggs.
11) Gradually add the breadcrumbs, stirring well to blend.
12) Now, add the milk to make a heavy batter.
13) On full power, cook the pudding for 5 minutes or until the top turns just dry.
14) Let stand covered for 8 minutes.
15) Then, to a suitable serving dish, turn out the pudding and remove the parchment. If the pudding is not set to your desire, return it to the microwave and cook for a further 2 minutes on high power.
SERVING
16) Serve the Marmalade Fruit Pudding in individual bowls.
