Ingredients

 Nonstick cooking spray
 All purpose flour2 Cup (16 tbs)
 Baking powder2 Teaspoon
 Baking soda1 Teaspoon
 Salt1/2 Teaspoon
 Bran cereal flakes1 Cup (16 tbs)
 Buttermilk1 Cup (16 tbs)
 Egg1 Large
 1/4 cup melted unsalted butter or margarine
 Firmly packed light brown sugar3 Tablespoon
 Orange marmalade1/4 Cup (16 tbs)

Directions

1 Preheat the oven to 375° F.
Lightly coat twelve 2 1/2 inch muffin cups with the cooking spray or insert cupcake liners.
In a large bowl, stirtogetherthe flour, baking powder, baking soda, salt, and bran cereal flakes.
2 In a medium-size bowl, whisktogetherthe buttermilk, egg, butter, and sugar.
Add the liquids to the dry ingredients and stir until just combined.
3 Spoon half the batter into the prepared muffin cups, filling each cup about 1/3 full.
Spoon 1 teaspoon of the marmalade into the centerof each muffin.
Top with the remaining half of the batter.
Bake for 18 to 20 minutes or until the tops of the muffins are golden and a toothpick inserted in the center comes out clean.
Let the muffins cool in the pan for 5 minutes, then turn them out onto racks to cool.
