1)Wash the fruit. Cut into quarters removing the thick central pith and seeds.
2)Tie seeds and the pith in a muslin bag and keep it aside.
3)Cut the fruit quarters with rind, into thin slices and place in a large basin or bowl.
4) Add sugar, salt and muslin bag to the fruit and mix well.
5) Let stand overnight.
6)Remove muslin bag, squeeze the juice from the bag and keep the fruit in a pan.
7)Place pan over moderate heat and cook fruit ,stirring till the sugar dissolves.
8)Boil mixture for 20 minutes till it it thick.
9) Stir in lime juice.
10)Pour into hot sterilized jars.
11) When cooled seal jars and store in cool dry place like the pantry.
12) Serve the Marmalade with hot fresh muffins or scones or use as required.
