Ingredients

 
Pastry for a 1 crust pie
 
2/3 cup light cream
 
Grated rind and juice of 1 lemon
 
1/2 cup Applesauce
 
1/4 cup sherry
 
1/2 cup sugar
 
3 eggs, well beaten

Directions

Line a 9 inch pie pan with pastry.
Refrigerate while you make the filling.
Combine applesauce with sugar, cream, lemon rind, lemon juice, and sherry.
Stir in the well beaten eggs and pour into chilled pastry shell.
Bake in a preheated 400° oven for 10 minutes.
Reduce oven heat to 325° and bake 45 minutes.
The filling will not become firm until the pie cools.
