 Unbaked pie shell1
 Eggs3
 Sugar3/4 Cup (16 tbs)
 1 tsp grated lemon rind
 Lemon juice3 Tablespoon
 1/2 tsp each, salt and pumpkin-pie spice
 Applesauce1 Cup (16 tbs)

Directions

Beat eggs and gradually add sugar.
Continue beating until the mixture is thick and lemon-colored.
Gradually add next four ingredients.
Fold in applesauce and pour into pie shell.
Bake at 425F for 20 minutes, then lower heat to 325F and bake for about 30 minutes or until set.
Cool and serve at room temperature.
Top with whipped cream.
