2 celery hearts cut in bite size pieces
 
6 small zucchini cut in julienne strips
 
3 sweet red peppers, cut in julienne strips
 
1/2 lb snow peas, trimmed 250 g
 
2 cans artichoke hearts, drained Lettuce
 
Marinade:
 
3 cups chicken stock 750 mL
 
1 cup dry white wine 250 mL
 
1 cup olive oil 250 mL
 
1/2 cup lemon juice 125 mL
 
1/4 cup chopped fresh parsley 50 mL
 
10 peppercorns
 
2 large cloves garlic, cut in half
 
1 tsp salt 5 mL
 
1/2 tsp crumbled dried thyme 2 mL

Directions

Marinade: In large saucepan, combine stock, wine, oil, lemon juice, parsley, peppercorns, garlic, salt and thyme; bring to boil.
Reduce heat and simmer for 45 minutes, stirring occasionally.
Strain and return to pan.
Add celery and zucchini to pan and simmer gently for 10 minutes; stir in peppers and snow peas and cook for 5 minutes longer.
Add artichoke hearts and remove from heat.
Let cool slightly.
Transfer vegetables to storage container and pour marinade over.
Cover and refrigerate for at least 4 hours.
To serve, remove vegetables from marinade with slotted spoon and serve on bed of lettuce or arrange in spoke fashion around entree, such as grilled chops or steak.
