Marinated Vegetable Salad Recipe

This Marinated Vegetable Salad is a lunch passion for me ! Try out this Marinated Vegetable Salad with rice or spaghetti or any other main dish tell me what you like it best with !

Ingredients

 
1 1/2 cups fat free or reduced fat Italian salad dressing
 
1/4 cup chopped fresh parsley
 
1 package (10 ounces) frozen brussels sprouts, thawed and halved
 
1 package (9 ounces)frozen artichoke hearts,thawed and quartered
 
2 carrots thinly sliced on the diagonal
 
1 cucumber sliced
 
1 green or sweet yellow pepper chopped
 
1 cup small cauliflower florets
 
1 cup small broccoli florets
 
2 cups sliced mushrooms

Directions

In a large bowl, stir together the salad dressing and parsley.
Add the brussels sprouts, artichokes, carrots, cucumber, pepper, cauliflower, and broccoli.
Stir until coated.
Cover and refrigerate for at least 2 hours, stir ring occasionally.
Just before serving, add the mushrooms and gently stir until coated.
