Directions

Peel shrimp, leaving tails on; devein shrimp.
Set aside.
Drain pineapple, reserving juice; set pineapple aside.
Combine reserved pineapple juice and next 5 ingredients in a shallow dish; mix well.
Add shrimp, tossing gently to coat.
Cover and marinate at least 1 hour in the refrigerator, stirring occasionally.
Cook onions in boiling water to cover 4 to 5 minutes or just until crisp-tender, and drain.
Remove shrimp from marinade, reserving marinade.
Alternate vegetables, pineapple, and shrimp on 6 skewers.
Broil 4 to 5 inches from heat 2 to 3 minutes on each side or until shrimp are done, basting frequently with marinade.
Serve over hot cooked rice, if desired.
