Marinated Mussels Recipe

Ingredients
2 tbsp chopped fresh coriander or parsley 25 mL
2 tbsp olive oil 25 mL
2 tsp lime juice 10 mL
1/4 tsp pepper 1 mL
1/4 tsp hot pepper sauce 1 mL
1 lb mussels (about 24) 500 g
1 tbsp chopped sweet red pepper 15 mL
Directions
In bowl, combine coriander, oil, lime juice, pepper and hot pepper sauce; taste and adjust seasoning if desired.
Scrub mussels and remove any beards; discard any that do not close when tapped.
In large saucepan over medium heat, cook mussels in 1/4 cup (50 mL) water, covered, for about 4 minutes or until mussels open.
Discard any that do not open.
Remove mussels from shells, reserving half the shells for serving.
Transfer mussels to shallow bowl; pour marinade over mussels.
Cover and marinate in refrigerator for up to 30 minutes.
Arrange shells on serving platter; place one mussel on each shell.
Garnish with red pepper.
