Ingredients

 
1 lb (500 g) button mushrooms
 
1/2 cup (125 ml) olive oil
 
1/2 cup (125 ml) vinegar
 
5 peppercorns
 
2 cloves garlic, crushed
 
4 tablespoons water
 
1 bay leaf

Directions

Wipe the mushrooms with a damp cloth.
Combine the oil, vinegar, peppercorns, garlic, water, bay leaf and salt in a saucepan.
Bring to a boil.
Reduce heat, cover and simmer for fifteen minutes.
Add the mushrooms and simmer for another five minutes, stirring occasionally.
Remove from heat and allow mushrooms to cool in the marinade.
When ready to serve, drain the mushrooms.
