 Lentils2 Cup (16 tbs)
 Water1 Quart
 Salt11/2 Teaspoon
 Olive oil1/2 Cup (16 tbs)
 Vinegar3 Tablespoon
 Scallions1/3 Cup (16 tbs), chopped
 Parsley3/4 Cup (16 tbs), chopped
 Ground black pepper1 To taste
 Salt To Taste

Directions

Pick over and wash the lentils.
Boil them gently in the water with the salt until tender, thirty to forty minutes.
Cool.
Add the oil, vinegar, scallions, parsley, pepper and additional salt to taste.
Chill.
