Marinated Garbanzo Salad Recipe

Ingredients

 
4 ounces drained canned chick-peas (garbanzo beans)
 
1 tablespoon each diced onion, diced green bell pepper, and red wine vinegar
 
1 1/2 teaspoons lemon juice
 
1 teaspoon olive or vegetable oil
 
1/2 teaspoon chopped fresh basil or 1/4 teaspoon dried
 
1/2 garlic clove, minced
 
1/8 teaspoon each salt and oregano leaves
 
Dash pepper

Directions

In bowl combine chick-peas, onion, and green pepper.
In measuring cup or small bowl combine remaining ingredients, mixing thoroughly.
Pour dressing over chick-pea mixture and toss gently to coat; cover and refrigerate overnight or at least 4 hours.
