Marinated Flank Steak Salad Recipe
Ingredients
1 (1-pound) beef flank steak
Vegetable cooking spray
1 medium onion, thinly sliced
1 medium-size green pepper, seeded and cut into thin strips
1 cup sliced fresh mushrooms
1 (2-ounce) jar sliced pimiento, drained
Marinade
Lettuce leaves
2 medium tomatoes, cut into wedges
Directions
Trim excess far from steak; set steak aside.
Coat a broiler rack with cooking spray.
Place steak on rack.
Broil 3 to 4 inches from heating element 5 to 7 minutes on each side or to desired degree of doneness.
Cut steak diagonally across groin into thin slices; cut slices into 11/2- inch pieces.
Cool slightly.
Combine steak, onion, green pepper, mushrooms, pimiento, and marinade in a shallow container.
Cover and refrigerate 8 hours or overnight.
Spoon salad into a lettuce-lined serving bowl; garnish with tomato wedges.
