Marinated Fish Steaks Recipe
Marinated fish steaks are made with salmon steaks. Lovely and flavorful, these salmon steaks are marinated with a soy and orange marinde with garlic and basil. Grilled and served with a side salad, it makes for a beautiful and elegant meal anytime.
Ingredients
4 fresh or frozen salmon steaks (about 1 inch thick)
1/3 cup orange juice
1/3 cup soy sauce
2 tablespoons snipped parsley
2 tablespoons cooking oil
1 clove garlic, crushed
1/2 teaspoon dried basil, crushed
Directions
Thaw fish, if frozen.
Place fish in a shallow dish.
For marinade, combine the orange juice, soy sauce, parsley, oil, garlic, and basil; pour over fish.
Let stand at room temperature for 2 hours or in the refrigerator for 4 to 6 hours, turning the steaks occasionally.
Drain the fish, reserving the marinade.
Place fish in a well greased wire grill basket or directly on the grill.
Grill over medium hot coals about 8 minutes or till fish is light brown.
Baste with marinade and turn.
Grill for 8 to 10 minutes more or till fish flakes easily when tested with a fork.
Meanwhile, heat the remaining marinade to boiling.
Transfer the fish to a serving platter.
Drizzle marinade over each serving.
