Marinated Fish Recipe

Ingredients
2 pounds halibut, sole, or grouper fillets or fish with heads and tails intact
Salt
Juice of 2 lemons
2 cups flour, seasoned with salt and pepper
Olive oil for frying
1/2 cup olive oil
1/4 cup flour
1/2 cup white wine
1/2 cup white wine vinegar
1 can (8 ounces) tomato sauce or 1 cup Tomato Sauce
1 teaspoon sugar
1 teaspoon fennel
2 garlic cloves, minced (optional)
Directions
Season fish with salt and lemon juice.
Dip in flour.
Heat olive oil in a large skillet; add fish and fry on both sides until medium brown, being careful not to burn the oil.
Arrange fish in a baking dish.
Discard cooking oil.
Combine 1/2 cup oil and flour in a skillet and, stirring constantly with a wooden spoon, cook until flour browns.
Add remaining ingredients and simmer, covered, 15 minutes.
Strain over fish.
Allow, to marinate out of the refrigerator several hours before serving.
Adjust salt and pepper.
Serve at room temperature or chilled.
