Marinated Eggplant And Tuna Salad is an easy to make and delicious seafood salad. It is one of my favorite additions to a seafood themed dinner spread. You just have to try the Marinated Eggplant And Tuna Salad!

Ingredients

 Eggplant3 Pound
 Lemon juice2 Tablespoon
 Olive oil1/2 Cup (16 tbs)
 Salt1 Teaspoon
 1 1/2 cups creole sauce
 Oregano1/4 Teaspoon
 Thyme1/4 Teaspoon
 Tuna1 Can (10oz)
 Basil1/4 Teaspoon, drained
 Garlic powder1/4 Teaspoon
 White vinegar2 Tablespoon
 Pepper white1/8 Teaspoon

Directions

Peel the eggplant and cut into 1/2 inch dice.
Heat 1/4 cup of oil in each of 2 large skillets.
Add the eggplant and saute over medium heat, stirring frequently, until the eggplant is tender but firm.
Remove from the heat.
Add the Creole Sauce, tuna, vinegar, lemon juice, salt, oregano, thyme, basil, garlic powder, and white pepper.
Mix well.
Refrigerate overnight.

Creole sauce can be prepared with tomatoes and green bell pepper, along with onion and seasonings. You can get this from your grocery store as well.
