Marinated Eggplant Recipe
Ingredients
| Eggplant | 1 | |
| French dressing | 1 Bottle (1l) | |
| Garlic | 1 Clove (5gm), minced | |
| 1 carton sour cream with minced chives | ||
Directions
Peel eggplant; cut into 3/4-inch slices.
Combine French dressing and garlic; marinate eggplant for 1 hour.
Drain.
Place eggplant slices in baking dish.
Bake at 450 degrees for 20 minutes.
Remove from oven; spread with sour cream.
Bake for 5 minutes longer; serve warm.
