Marinated Zucchini Salad Recipe
Ingredients
| 6 zucchini (courgettes), sliced | ||
| Onion | 1 , sliced | |
| Fresh herb dressing | ||
| Dill | 2 Tablespoon, chopped | |
| Parsley | 1 Tablespoon, chopped | |
| Garlic | 1 Clove (5gm), crushed | |
| 1/4 cup / 60 mL / 2 fl oz white vinegar | ||
| Olive oil | 2 Tablespoon | |
| Lemon juice | 1 Tablespoon | |
| black pepper | 1 | |
Directions
1. Place zucchini (courgettes) and onion in a bowl.
2. To make dressing, place dill, parsley, garlic, vinegar, oil, lemon juice and black pepper to taste in bowl and whisk to combine. Pour over zucchini (courgette) mixture and toss. Cover and chill for at least 1 hour before serving.
