Marinated Zucchini On Tomatoes Recipe
Ingredients
| Zucchini | 1 pound, thinly sliced | |
| 1/2 cup cream style cottage cheese with chives | ||
| Dairy sour cream | 1/4 Cup (16 tbs) | |
| Lemon juice | 1 Tablespoon | |
| Garlic salt | 1/2 Teaspoon | |
| Green pepper | 1/4 Cup (16 tbs), chopped | |
| Tomatoes | 2 Medium, sliced | |
| Endive or parsley | ||
Directions
In covered saucepan cook zucchini in small amount of boiling water till crisp tender, 2 to 3 minutes.
Drain well.
In mixing bowl combine cottage cheese, sour cream, lemon juice, and garlic salt.
Add zucchini and green pepper; toss to coat.
Chill.
