1/2 cup fat-free Italian dressing
1/4 cup sliced green onions
1/4 cup balsamic vinegar
1 (14-ounce) can quartered artichoke hearts, drained
1 (8-ounce) package presliced fresh mushrooms
1 medium zucchini, thinly sliced
4 cups torn curly leaf lettuce
1 cup cherry tomatoes, halved
3/4 cup (1/2-inch) cubed part-skim mozzarella cheese (about 4 ounces)
1/4 cup sliced ripe olives
2 tablespoons grated fresh Parmesan cheese
Directions
1. Combine first 6 ingredients in a large bowl; stir well. Cover and marinate in refrigerator up to 4 hours, stirring occasionally.
