Ingredients

 1 16-ounce bag frozen mixed vegetables, defrosted
 Can chickpeas1 15 Ounce, drained, rinsed
 1/3 cup low-calorie Italian salad dressing
 1/4 cup frozen apple juice concentrate, defrosted
 1 tablespoon acceptable vegetable oil
 1 tablespoon rice or white wine vinegar
 Lemon juice2 Tablespoon
 2 cloves garlic, finely minced, or 1/4 teaspoon garlic powder
 Ground black pepper1/8 Teaspoon
 Lettuce leaves8 , rinsed

Directions

Combine frozen vegetables and chickpeas in a bowl.
In a jar with a tight-fitting lid, shake the salad dressing, juice concentrate, oil, vinegar, lemon juice, garlic and pepper to mix well.
Pour over vegetable-bean mixture and mix well.
Let marinate for a few hours in refrigerator.
Arrange salad over lettuce leaves.
Serve chilled.
