Favorite Marinated Vegetable Salad Recipe

| 1 16-ounce bag frozen mixed vegetables, defrosted | ||

| 1/3 cup low-calorie Italian salad dressing | ||
| 1/4 cup frozen apple juice concentrate, defrosted | ||
| 1 tablespoon acceptable vegetable oil | ||
| 1 tablespoon rice or white wine vinegar | ||
| Lemon juice | 2 Tablespoon | |
| 2 cloves garlic, finely minced, or 1/4 teaspoon garlic powder | ||
| Ground black pepper | 1/8 Teaspoon | |
| Lettuce leaves | 8 , rinsed | |
Directions
Combine frozen vegetables and chickpeas in a bowl.
In a jar with a tight-fitting lid, shake the salad dressing, juice concentrate, oil, vinegar, lemon juice, garlic and pepper to mix well.
Pour over vegetable-bean mixture and mix well.
Let marinate for a few hours in refrigerator.
Arrange salad over lettuce leaves.
Serve chilled.
