Marinated Tomatoes Recipe
Ingredients
| Ripe tomatoes | 6 Large | |
| Salt | 1 Teaspoon | |
| 1/4 teaspoon coarse black pepper | ||
| Dried marjoram | 1/2 Teaspoon | |
| Parsley | 1/4 Cup (16 tbs), finely chopped | |
| Chives | 1/4 Cup (16 tbs), chopped | |
| Salad oil | 2/3 Cup (16 tbs) | |
| 1/4 cup tarragon vinegar | ||
Directions
Peel tomatoes, cut in half crosswise and place in bowl.
Combine seasonings, herbs, oil and vinegar and pour over tomatoes, covering well.
Cover and chill 1 to 2 hours or overnight, occasionally spooning dressing over tomatoes.
To serve, drain dressing and arrange tomatoes on platter.
Serves 6 to 8.
Tomatoes and dressing are very good when tossed with a green salad.
