Marinated Shrimp & Vegetables Recipe

Marinated shrimp and vegetables is a raw seafood and marinated vegetables preparation. Made with cauliflower, bell peppers, zucchini and mushrooms marinated along with shrimps in lemon juice concentrate and oil with dill and hot pepper sauce, it is chilled. garnished and served as appetizer or on the side like a salad, it is savory and peppy.

Ingredients

 
1 pound raw medium shrimp, peeled, deveined and cooked
 
1 cup fresh cauliflowerets
 
4 ounces small whole fresh mushrooms
 
1 cup sliced zucchini
 
1 large green bell pepper, seeded and cut into squares
 
1 large red bell pepper, seeded and cut into squares
 
3/4 cup Lemon Juice from Concentrate
 
1 tablespoon chopped green onion
 
2 teaspoons sugar
 
1 teaspoon salt
 
1/4 to 1/2 teaspoon dried dill weed
 
5 drops hot pepper sauce
 
3/4 cup vegetable oil

Directions

Place shrimp, cauliflower, mushrooms, zucchini and bell peppers in large shallow dish.
In small bowl or jar, combine all remaining ingredients except oil; mix well.
Add oil; whisk or shake well.
Pour over shrimp mixture.
Cover; chill 6 hours or overnight, stirring occasionally.
Garnish as desired.
Refrigerate leftovers.
