Marinated Seafood Kebabs Recipe
Ingredients
| Prawns | 2 Pound | |
| Fish fillets | 1/2 Pound, cubed | |
| Boiling water | 1 Cup (16 tbs) | |
| Coconut | 1/2 Cup (16 tbs) | |
| Soy sauce | 2 Teaspoon | |
| Garlic | 1 Clove (5gm), crushed | |
| Ground cumin | 2 Teaspoon | |
| Lemon juice | 1 Tablespoon | |
| Tomato and Mint Salad | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Remove boiling water from heat, add coconut and infuse for 6-8 minutes, then pour into a blender and whirl 2-3 minutes.
Strain into a bowl through muslin to extract coconut milk.
Add soy sauce, garlic, salt, pepper, cumin and lemon juice and mix well.
Add prawns and fish to the mixture and marinade for 1-1 1/4 hours, stirring and basting occasionally.
Drain seafood and thread, alternately, on skewers.
Place on the grid over medium coals and cook 12-15 minutes, turning often.
Baste with the marinade while cooking.
