Marinated Scallop Flower Recipe

Yummy and visually appealing, Marinated Scallop Flower is a frequently made dish for my parties. My seafood spread is never complete without this elegant Marinated Scallop Flower! Try it!

Ingredients

 
1 lb (450 g) fresh scallops
 
1/3 Cup (80 ml) lime juice
 
1 garlic clove, finely sliced
 
1/4 Cup (60 ml) olive oil
 
3 tbsp (45 ml) tomato, diced
 
5 tsp (25 ml) chopped parsley
 
2 tbsp (30 ml) French (dry) shallots, chopped
 
Salt and pepper
 
Salmon caviar

Directions

–  Cut scallops into thin slices.
–  In a bowl, combine other ingredients except for salmon caviar, then add scallops to mixture, cover with plastic wrap, and marinate for
4 hours in refrigerator.
–  Arrange in the shape of a flower in a serving dish and garnish with salmon caviar.
