Directions
1. Roast and peel peppers and then slice, reserving the juices.
2. In a medium mixing bowl stir together sliced roast peppers and their juices, raisins, toasted pine nuts, olive oil, honey, cilantro or parsley, garlic, apple cider vinegar, salt and crushed red chili flakes.
3. Season to taste with black pepper,
4. Marinate in refrigerator at least an hour or two – overnight is even better.
