Marinated Prunes On Ice Recipe

Ingredients
2 cups water
1 1/2 cups sugar
12 extra large, pitted prunes
1/2 cup cognac
3 pints rich vanilla ice cream
Optional:
2 cups sweetened whipped cream
Directions
Pour water into a medium-sized saucepan.
Stir in the sugar.
Bring to a boil over high heat, stirring until the sugar dissolves.
Add the prunes, lower the heat, cover, and simmer 10 to 15 minutes to plump, soften, and sweeten the prunes.
Take pan off the heat.
Remove prunes from the syrup with a slotted spoon.
Place prunes in a bowl, pour the cognac over them, cover, and refrigerate several hours or several days.
Refrigerate the syrup also.
