Marinated Okra Recipe
I never liked okra till I tied this Marinated Okra recipe. Since then I have become a fan. This Marinated Okra dish had terrific results!
Ingredients
| 3/4 cup olive or salad oil | ||
| White vinegar | 1/2 Cup (16 tbs) | |
| Dry mustard | 3/4 Teaspoon | |
| Thyme leaves | 3/4 Teaspoon | |
| Sugar | 1/2 Teaspoon | |
| Salt | To Taste | |
| Water | ||
| 2 1/2 pounds tender young okra | ||
Directions
1. In large bowl, mix first 5 ingredients with 1 1/2 teaspoons salt; set marinade aside.
2. In 12-inch skillet over high heat, heat 1/2 inch water to boiling. Add okra and 1/2 tea spoon salt; over high heat, heat to boiling. Reduce heat to low; cover and simmer 5 minutes or until tender-crisp. Drain.
3. Add okra to marinade. Cover bowl and refrigerate at least 4 hours or overnight, tossing occasionally. Drain before serving.
