Ingredients

 1 kg / 2 lb large firm mushrooms
 300 ml / 1/2 pint / 1 1/4 cups wine or cider vinegar
 150 ml / 1/4 pint / 2/3 cup olive oil
 Black peppercorns10 To taste
 Garlic2 Clove (5gm), crushed
 Sprig of fresh dill (or 1/2 tsp dried dill)
 Salt To Taste

Directions

Wash mushrooms gently.
Place in a large screw-topped jar, or in 2 jars.
Combine and simmer remaining ingredients in a saucepan for about 15 min.
Add this liquid to the jar, cover tightly, and leave for at least 1 day.
Serve on a platter, with toothpicks speared through the stems.
