Marinated Mushroom Salad Recipe
Ingredients
| Roasted red peppers | 8 To taste, cut into strips | |
| 125 g/4 oz mushrooms, sliced | ||
| Herb and garlic dressing | ||
| Basil | 1 Tablespoon, chopped | |
| Parsley | 1 Tablespoon, chopped | |
| Garlic | 2 Clove (5gm), crushed | |
| Lemon juice | 2 Tablespoon | |
| Red wine vinegar | 2 Tablespoon | |
| White wine vinegar | 2 Tablespoon | |
| Safflower oil | 2 Tablespoon | |
Directions
1. Whisk together basil, parsley, garlic, lemon juice, red and white wine vinegars and oil.
2. Place red capsicums (peppers) and mushrooms in a bowl. Pour over dressing. Toss. Cover. Marinate in the refrigerator for 3 hours.
