Marinated Lobster Tails Recipe

Ingredients
4 large lobster tails, shelled and in 1 in (2.5 cm) pieces
4 tbsp (60 ml) olive oil
2 tbsp (30 ml) tarragon wine vinegar
1 tbsp (15 ml) chopped parsley
1 tbsp (15 ml) chopped tarragon
1/4 tsp (1ml) paprika
3 tbsp (45 ml) melted butter
2 tbsp (30 ml) capers
Salt and pepper
Juice 1/2 lemon
Directions
Place lobster, oil, vinegar, parsley, tarragon and paprika in bowl.
Season well with pepper and marinate 30 minutes.
Drain lobster.
Heat butter in large frying pan.
When hot, add lobster pieces and saute 3 to 5 minutes over high heat.
Stir often and turn pieces over once.
Stir in capers and lemon juice and season well.
Finish cooking 1 minute.
Season well with pepper and marinate 30 minutes.
