| 2 10-ounce packages frozen baby lima beans | ||
| Salad oil | 1/4 Cup (16 tbs) | |
| 1 medium-sized green pepper, diced | ||
| Onion | 1 Small, diced | |
| Cider vinegar | 1/4 Cup (16 tbs) | |
| Sugar | 2 Tablespoon | |
| Salt | 1/2 Teaspoon | |
Directions
1. In 12-inch skillet, prepare lima beans as label directs but prepare both packages together. Drain and set aside.
2. In same skillet over medium heat, in hot salad oil, cook green pepper and onion until tender, stirring occasionally.
3. In medium-sized bowl, combine cooked lima beans, green-pepper mixture, vinegar, sugar, and salt. Cover and refrigerate about 2 hours.
