Ingredients

 4 large Iamb chops
 Salad oil3 Ounce (Marinade:)
 Wine vinegar1 1/2 Ounce (Marinade:)
 Salt1 Tablespoon (Marinade:)
 5 crushed white or black peppercorns
 Yellow onion1 Small, chopped (Marinade:)
 Parsley bunch1 Large (Marinade:)
 Thyme1/2 Teaspoon (Marinade:)
 Bay leaf1 , crumbled (Marinade:)
 Red currant jelly3 Tablespoon (Cumberland Sauce:)
 Port wine1 Cup (16 tbs) (Cumberland Sauce:)
 Mustard powder1 Teaspoon (Cumberland Sauce:)
 1 teaspoon finely chopped yellow onion
 Cayenne pepper1 (Cumberland Sauce:)
 Ginger
 1 tablespoon very finely sliced orange rind
 1 tablespoon very finely sliced lemon rind

Directions

1. Mix all the ingredients for the marinade. Place the chops in the marinade for at least 3 hours. Turn them occasionally.
2. Broil the chops for 5-6 minutes on each side.
3. Stir the currant jelly in the port wine and seasonings. Don't forget to cut away the white on the orange and lemon rinds.
