Marinated Grilled Chops Recipe
Ingredients
| 4 large Iamb chops | ||
| Salad oil | 3 Ounce (Marinade:) | |
| Wine vinegar | 1 1/2 Ounce (Marinade:) | |

| 5 crushed white or black peppercorns | ||
| Yellow onion | 1 Small, chopped (Marinade:) | |
| Parsley bunch | 1 Large (Marinade:) | |
| Thyme | 1/2 Teaspoon (Marinade:) | |
| Bay leaf | 1 , crumbled (Marinade:) | |
| Red currant jelly | 3 Tablespoon (Cumberland Sauce:) | |
| Port wine | 1 Cup (16 tbs) (Cumberland Sauce:) | |
| Mustard powder | 1 Teaspoon (Cumberland Sauce:) | |
| 1 teaspoon finely chopped yellow onion | ||
| Cayenne pepper | 1 (Cumberland Sauce:) | |
| Ginger | ||
| 1 tablespoon very finely sliced orange rind | ||
| 1 tablespoon very finely sliced lemon rind | ||
Directions
1. Mix all the ingredients for the marinade. Place the chops in the marinade for at least 3 hours. Turn them occasionally.
2. Broil the chops for 5-6 minutes on each side.
3. Stir the currant jelly in the port wine and seasonings. Don't forget to cut away the white on the orange and lemon rinds.
