Marinated Fresh Vegetable Recipe
Ingredients
| White wine vinegar | 1/2 Cup (16 tbs) | |
| Water | 1 Cup (16 tbs) | |
| Olive oil | 1 Tablespoon | |
| 1 clove garlic, sliced thin | ||
| Paprika | 1/2 Teaspoon | |
| Black pepper | 1/4 Teaspoon | |
| 2 medium size carrots, peeled and cut into matchstick strips | ||
| 1 stalk celery, cut into matchstick strips | ||
| 1 medium size zucchini, cut into matchstick strips | ||
| 1 small sweet red pepper, cored, seeded, and cut into matchstick strips | ||
| Capers | 1 Tablespoon, drained | |
Directions
In a medium size bowl, mix the vinegar, water, olive oil, garlic, paprika, and black pepper.
Add the carrots, celery, zucchini, red pepper, and capers and toss well.
Cover and refrigerate overnight.
