Marinated Fillet Of Pork Recipe
Ingredients
For the marinade:
3/4 cup white wine
3/4 cup vinegar
1 teaspoon thyme
2 bay leaves
1 clove garlic, crushed
1/2 teaspoon dried tarragon
6 juniper berries, crushed
2 pounds fillet of pork
1 piece 2 tablespoons oil
2 medium sized carrots. peeled and sliced
1 medium sized onion, sliced
1 stalk celery, sliced
1 sweet red or green pepper, seeded and cut into strips
1 tablespoon chopped parsley
1 pound tomatoes, peeled, seeded and sliced
2 cloves garlic, crushed
1 teaspoon salt
Freshly ground black pepper
2 tablespoons butter
Directions
Combine marinade ingredients.
Add pork and marinate overnight.
Heat oil in a skillet and saute carrots, onion, celery, red pepper and parsley for 5 minutes.
Add tomatoes, garlic, salt and pepper and cook 2 minutes.
Strain and add marinade and simmer 20 minutes.
Meanwhile heat butter in a heavy casserole.
Dry pork well with paper towels and brown on all sides in hot butter.
Add vegetable mixture and bring to a simmer.
Cover and cook 45 minutes to 1 hour or until pork is tender.
