Marinated Fiddlehead Greens Recipe
I found this Marinated Fiddlehead Greens recipe in an old book. Marinated Fiddlehead Greens looked so good that I had to try it out and it did turn out to be very tasty. Make it today!
Ingredients
2 cups (500 ml) fiddle-head greens
1/2 cup (125 ml) olive oil
1/4 cup (60 ml) white wine vinegar
Salt and pepper
1/2 tsp (2 ml) chopped tarragon
Juice of 1/2 lemon
1 tsp (5 ml) sugar
2 tomatoes, thinly sliced
8 black olives
Directions
– In a bowl, combine all ingredients except tomatoes and olives and marinate for 2 hours.
– Spread mixture over thinly sliced tomatoes. Garnish with black olives and serve.
