Ingredients

 Carrots1 1/2 Pound, sliced
 2 tablespoons broth, either homemade or canned
 Olive oil2 Teaspoon
 Garlic2 Clove (5gm), cut in half
 Granulated Sugar1 1/2 Teaspoon
 Salt1/4 Teaspoon
 Pepper white1/8 Teaspoon
 Watercress1/2 Cup (16 tbs), chopped

Directions

In a steamer or medium saucepan steam carrots with a small amount of water until tender-crisp; drain.
In a medium bowl combine broth, vinegar, oil, garlic, sugar, salt and white pepper; mix well.
Add watercress and carrots; mix well.
Marinate in refrigerator for several hours to overnight.
Serve chilled or reheat gently to serve hot.
