Carrots Marinated In Mustard Recipe
Ingredients
| Dijon Mustard | 3 Tablespoon | |
| Red wine vinegar | 3 Tablespoon | |
| 1/4 cup olive oil, preferably extra-virgin | ||
| 1 pound large carrots, peeled and cut into matchstick | ||
| 8 ounces thinly sliced hard salami, such as Genoa, or other cured meat (optional) | ||
| Chopped fresh parsley, for garnish | ||
Directions
1. In a large bowl, combine mustard and vinegar. Whisk to blend. Gradually whisk in olive oil. Add carrots and toss to coat with dressing. Marinate at room temperature, tossing occasionally, 2 hours.
