 Dijon Mustard3 Tablespoon
 Red wine vinegar3 Tablespoon
 1/4 cup olive oil, preferably extra-virgin
 1 pound large carrots, peeled and cut into matchstick
 8 ounces thinly sliced hard salami, such as Genoa, or other cured meat (optional)
 Chopped fresh parsley, for garnish

Directions

1. In a large bowl, combine mustard and vinegar. Whisk to blend. Gradually whisk in olive oil. Add carrots and toss to coat with dressing. Marinate at room temperature, tossing occasionally, 2 hours.
