Marinated Campari Tomato Salad Recipe
Ingredients
| White wine vinegar | 1 1/4 Cup (16 tbs) | |
| Balsamic vinegar | 1/4 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Shallots | 1/4 Cup (16 tbs), finely chopped | |
| Chives | 2 Tablespoon, finely chopped | |
| Lemon juice | 2 Tablespoon | |
| Ground white pepper | 1/4 Teaspoon | |
| Extra-virgin olive oil- 2 1/2 tablespoons | ||
| Campari Tomato- 2 pounds, quartered vertically | ||
| Yellow tomato- 2 no-€™s, cut horizontally into ½ inch slices | ||
| Assorted Sweet bell pepper- 4 no-€™s, cored, seeded and cut into ½ inch slices | ||
| Long English cucumber- 1 no, cut into ½ inch slices | ||
Directions
MAKING
1. In a medium sized bowl, combine all the ingredients (apart from vegetables and oil) and mix well. Add oil and whisk well till combined.
2. Add bell peppers and tomato, coat gently and cling wrap. Keep aside for 2 to 3 hours.
3. Just before serving, add cucumber and toss well.
SERVING
4. Place on a presentation platter and serve with remaining dressing.
