Marinated Broiled Peppers Recipe
Marinated broiled peppers is a herbed peppers recipe. Made with a mixed pepper medley, the broiled peppers are flavored with garlic and oregano to serve.
Ingredients
6 medium size sweet red, green, or yellow peppers or a combination
1 tablespoon olive oil
1 tablespoon red wine vinegar
1 clove garlic, minced
1/2 teaspoon dried oregano, crumbled
1/4 teaspoon black pepper
Directions
Preheat the broiler.
Place the peppers on the broiler pan rack and broil about 6 inches from the heat, turning 3 times, until the skins are lightly charred and blistered all over 5 to 8 minutes.
Transfer the peppers to a paper bag and let steam until cool enough to handle.
Remove the stems, seeds, and skins of the peppers over a bowl to catch the juices.
Cut the peppers into 1/2 inch strips and place in a serving dish.
To the juices in the bowl, add the olive oil, vinegar, garlic, oregano, and black pepper, and mix together.
Pour the marinade over the peppers and let them sit at room temperature for 1 hour before serving.
