Marinated Beets Recipe

Ingredients

 
4 beets, cooked
 
1/2 Cup (125 ml) water
 
1 Cup (250 ml) wine vinegar
 
2 tsp (10 ml) sugar
 
1/2 tsp (2ml)salt
 
Pinch of chopped chives
 
Pinch of chopped tarragon
 
Pinch of chopped fennel
 
Mayonnaise, to taste

Directions

–  In a saucepan filled with lightly salted boiling water, cook beets, then drain and cut into sticks. Place in a bowl and set aside.
–  In a separate saucepan, combine water, wine vinegar, sugar, salt, and herbs and bring to a boil. Let mixture boil for 1 minute.
–  Pour mixture over beets. Let mixture marinate at least 2 hours.
