Marinated Asparagus Recipe
Ingredients
| Asparagus | 2 Pound | |
| Green pepper - 1 medium-size, coarsely chopped | ||
| Green onions with tops - 5, chopped | ||
| Celery - 1 stalk, finely chopped | ||
| Unsweetened apple cider - 3/4 cup | ||
| Red wine vinegar | 1/2 Cup (16 tbs) | |
| Garlic | 1/2 Clove (5gm), minced | |
| Paprika | 1/4 Teaspoon | |
| Leaf lettuce | ||
Directions
GETTING READY
1. Wash the asparagus, snap off the tough ends and remove the scales on the vegetable with a knife or a vegetable parer. Wash again.
2. In a large pan of boiling water, tip in the washed asparagus and cook for 6-8 minuets covered till crisp tender and cooked through. Drain immediately.
MAKING
3. In a large bowl, place the green pepper, green onions, celery, apple cider, vinegar, garlic and paprika and mix well.
4. In a large 13- x 9- x 2-inch baking dish, place the asparagus and pour the dressing over the asparagus. Chill this for 4 hour or overnight. Drain the marinade before serving.
SERVING
5. Serve on a large lettuce leaf while garnished with pimiento and grated cheese.
