Ingredients

 Frozen artichoke hearts package2 , thawed
 Salad oil2/3 Cup (16 tbs)
 White wine vinegar1/3 Cup (16 tbs)
 1/2 teaspoon each dry mustard and sugar
 Salt1 Teaspoon
 Pepper1/4 Teaspoon
 3 tablespoons chopped fresh mint or 1 1/2 tablespoons dry mint leaves

Directions

Cook artichokes according to package directions; drain.
In a small bowl, combine oil, vinegar, mustard, sugar, salt, pepper, and mint; blend well.
Pour over artichokes.
Cover and refrigerate for at least 4 hours or until next day.
